Usually, since all the players are of considerable strength, they will hop over to the other boards and form a quick evaluation of their teammates position before deciding to play for a win/draw. The decisions tend to be made on the fly and not really before the game as there are too many variables at play during the game (for example, a novelty, or a blunder etc.).
Yes, there are always blunders and surprises in operations. But I think there is an objective evaluation on probable outcomes based on past/current form evaluations and best and worst case scenarios.
